La Terreta's snack: Coca de "llanda"

We have been quarantined at home for approximately 20 days. And after the toilet paper rush, shopping baskets these weeks have been filled with flour and yeast. Because our streak of pastry chefs and bakers has come out. During these days, we have made a typical Valencian recipe: Coca de "llanda", which reminds us of our childhood.

This recipe is called that because it is made with a rectangular metal container with a height of about 3 cm, called “llanda”, which literally translated is "can". On this occasion, we did not have that mold and we have chosen a round one. Below, we leave you the recipe.

INGREDIENTS

- 3 large or 5 small eggs

- 150g of sugar

- Lemon zest

- 170 gr of sunflower oil

- 220g of milk

- 400 g of flour

- Cinnamon

- 1 sachet of yeast

Biscuit

Steps to follow:

1. Preheat the oven to 180ºC.

2. We prepare the mold and line it with baking paper or spread it with butter and a little flour.

3. Beat the eggs with the sugar until the dough turns white.

4. Add the lemon zest, oil and milk.

5. With the help of the strainer we sift the flour and add it.

6. Finally, we put the yeast envelope.

7. Pour into the mold and sprinkle sugar and cinnamon on top. With this we will get a crunchy layer that is very characteristic of this cake (it is what we like the most).

8. Put it in the oven at medium height and bake for between 20 and 30 minutes. It depends on the oven, but as with all cakes you can try to poke it with a knife or toothpick and if it comes out clean, it's ready!
